This is fairly quick and easy, and it's really the addition of the Tropical Salsa on the next page that sends it over. (I've often used mango instead of papaya for that salsa), Lots of flavor without being spicy, so it can be a wonderful soothing dinner or lunch. More than a few times I have forgotten the vinegar; which is a splash you add at the end, just before serving, and it DOES make a difference.
