This Waldorf salad variation has apples, pineapple, celery, carrots, orange, raisins, and almonds. It also calls for a green bell pepper - we substituted a red bell pepper (to add more sweetness). The dressing was a very runny mix of yogurt, orange juice, lemon, and cinnamon.
I really liked the crunchiness of this salad. However, it seemed like it should have been sweeter - and I think maybe too many carrots.
