This is just as good as your ripe pineapple. It was so good with the fresh pineapple; I think it would be a crime to use canned. I added the maximum amount of mint, but the mint flavor was lost. For my mint, I will try more next time to try and give the salsa more dimension than just pineapple flavor. It was very good, but do not serve it next to the mango or tomato salsa or it will be outshined.
