- 1/2 tsp light brown sugar
- 1 1/2 tsp black pepper
- pinch cayenne
- 1/4 cup olive oil
- 1/2 cup salted cashews
- 1 3/4 pound boneless, skinless chicken thighs
- 1 tsp kosher salt
- 1/4 cup scallions, finely chopped
- 2 tbsp cilantro stems, chopped
- 3 garlic cloves, chopped
- 2 tbsp dark rum
- 1 large mango
- 1 tsp cider vinegar
- 1/3 cup cilantro leaves, chopped

Very delicious! We used salted peanuts instead of cashews, which worked very well. I missed some sauce to go with the rice, DB did not. Also, although the dish contains quite some mango's, I would serve it with an extra vegetable side dish. I found this dish difficult to locate - maybe Thai, or maybe Caribbean? No idea. Either way, runner beans would probably work well. Be careful that the chicken does not dry out. We used chicken breasts, which works well even though they are prone to dry out;...
