  • 1 lb Red Potatoes, unpeeled
  • 1 1/2 Tbsp Butter
  • 2 Tbsp Green Onion, chopped
  • 2 Tbsp Red Bell Pepper, chopped
  • 1 Clove Garlic, small, minced
  • Pinch Ground Red Pepper
  • 3/4 cup Whipping Cream
  • 1/3 cup Milk
  • 1/4 Tsp Salt
  • 1/2 cup Swiss Cheese, shredded
  • 2 Tbsp Parmesan Cheese, grated

Absolutely delicious! Made a few minor adjustments, like grating the garlic instead of dicing it, adding a little freshly grated nutmeg to the milk sauce, adding a little Gruyere to the Swiss cheese, and alternating potato and cheese layers. Simply scrumptious!!! Would be great to make for large crowds or could easily enjoy all by myself! Would most definitely recommend making it!!!
