I used this recipe for the Danish recipe only. It is super simple to make and a very delicious filling. It is very cool and refreshing. I made it with fresh lemons and wouldn’t make it any other way.
My only complaint is that I made 1/8 the recipe, since I was going to use this filling for 1/8 of the recipe, and there were still tons left over. It would be nice if the recipe stated about how much filling was used for each Danish, so I could have scaled the recipe to make a usable amount witho... Read more

This was an easy lemon curd to make but we didn't like it quiet as good as we do the lemon curd I usually make. The one I make is Gale Gand's recipe and has more lemon juice. This one was still good though and I liked having a variety of fruit flavors in the Thumbprint Rolls.
