This turned out really well. I didn't have jarred roasted peppers so I used some fire roasted tomatoes and they went with the dish really well. The standout flavors are the goat cheese (I bought a 4 pepper flavor goat cheese and it was delicious), and the fresh red pepper which adds sweetness. The dish has a lot of flavor and with the barley and portobellos it's filling.
