This recipe is so good. I've made it as written and also several of my own variations. I have made the pie crust recipe included in the recipe and I've also used a Pillsbury frozen crust. Both were equally delicious. I've used various cheeses but our favorite is Cabot sharp white cheddar. This one is best with fresh garden tomatoes.
