This was great and my son and I really enjoyed it. Since the recipe didn't state whether or not to leave the bacon slices whole I decided to cut my slices in half to make them work a little better in the sauce. Once my bacon was browned I turned off my burner since it stays hot and added the butter and let it melt and get foamy as the recipe suggested. Next I added the lemon juice and parsley and immediately poured over my baked fish. I served it with slaw, baked potatoes and hush-puppies.

As this recipe is really very simple, the right timing for he sauce is crucial - and unfortunately, it was a little off in this case. The bacon was slightly burnt and too salty, the latter probably because there was too much, even though we had already used less than mentioned, and because it was, well, slightly burnt. The butter had turned too dark as well, and well, it's just not a good idea to add parsley a whole seven minutes before the rest of the sauce is done, that should happen right at...
