This recipe is fine, but not very creative or original. What bothers me about it is that it appears in this book, which is supposed to be about putting food up in the pantry but then has a whole chapter on eggs. Eggs are not a food that you put up, in my opinion, like pickles or relish or jam. Eggs are something you buy weekly at the store. So I think having a chapter on eggs and a recipe like this is something of a cheat.
