I decided to divide this recipe by 4 so I could have one egg. It was so good next time I'll just halve it. This is quick and simple. I didn't even use any oil in my small cast iron skillet for the salsa. I don't think it's necessary. I choose the Monterey Jack Cheese but I bet it'll be just as good with Cheddar. I did add a little fresh ground black pepper to the final dish. We like our salsa on the spicy side so this was a little spicy just the way we like it. I like my egg less cooked than hub... Read more
