This recipe was a little more involved than I had bargained for but that was completely my own fault for not reading the recipe all the way through before starting.
First of all, the recipe calls for pumpkin pie spice which I refuse to buy on principle. This meant I had to look up a recipe for pumpkin pie spice so I'd get the ratios correct. And I don't think a cookbook with "easy" in the title should have you beating your eggwhites for pancakes!

LOL - I thought the same thing about the "easy" title. That being said, I really like this cookbook and the pancakes were delicious. I know better than to not read through an entire recipe before starting to cook.
