I made this for supper tonight and we all enjoyed it very much. We love hominy and I was delighted to find a new recipe using it. Cheese, bacon, green chilies, onion and a little kick from a jalapeno made this a tasty treat. I found some fire roasted chilies and used those. I only made a 1/2 recipe and which serves 3 and the 3 of us had very generous portions with a portion left over.
