This is a smooth, rich ice cream with great caramel flavour. It's a little more involved than most custard based ice creams as the caramel must be made first.
A word of caution regarding the addition of the hot milk to the hot caramel....I used a pot that was larger than was required, added the milk in a slow, steady stream and the mixture bubbled over the top. Perhaps adding it in small increments at first, then progressively larger amounts, building up to a slow, steady stream may prevent this...
