Even though I liked the Barefoot Contessa's Beef Barley Soup I made awhile back I like this one even better and it's supposed to be healthier. How about that? This one uses stew beef that you brown in a bit of olive oil. You also brown and cook the onions and mushrooms and finally the carrots and celery before adding in the other ingredients.
This is a rich and hearty tasting soup that leaves you feeling full and satisfied. Another perfect winter soup to warm you up. I'll be making this one agai...
