This was a pretty nice salad. It had the nice mineral flavor of fresh roasted beets, with just a bit of lemon juice and olive oil, and of course, a big pinch of cinnamon. I prepared this for Valentine's day - and carved many beet pieces into heart shapes. I liked that it only required an hour to marinade. The light dressing made this a very nice addition to an otherwise heavy rich meal.
