I love roast carrots, and typically prepare them with cumin. When the carrots are half way done roasting, you put a browned butter-maple syrup mixture on them. This adds more sweetness to the carrots, and was appreciated, especially by the teenagers.

I used regular sized carrots, cut to about 2-inch segments. They took twice as long to cook as the recipe suggests, but your mileage may vary. But the final result was very nice.
