This is a very tasty way to prepare tofu without added oil. First, the tofu is marinated (overnight is best). Then, it is dredged in the coating mix and baked. The result is full of savory goodness, and the coating bakes to form a crispy "skin."

Does the coating still taste good the day after? I might have to get my hands on this book after seeing all your wonderful reviews!

The coating doesn't stay crispy. You might be able to crisp it it in the oven. I usually use the leftovers for sandwiches.
