This is a very different, but delicious, take on guacamole from what I’m used to “ the tomatillos provide tanginess and the roasted garlic and serranos provide flavour and heat.
The guacamole is simple to make but does start with a batch of Essential Roasted Tomatillo Serrano Salsa, made by broiling tomatillos in the oven until blackened, toasting serranos and garlic in a skillet and pureeing these ingredients together.
