After reading the comments at The Kitchn website, I decided to make a chicken salad version of this recipe using chopped scallions instead of chives and adding the merest smidgen of tarragon. Like QS, I served this on a ciabatta roll. I wish I'd had a tomato to slice up and add to the sandwich. Still, we liked it very much as a light and healthy summer dinner on a hot day. A well-chilled glass of sauvignon blanc made a nice pairing.

A chicken-tarragon version sounds great! And I always enjoy hearing your wine pairings. I'm glad you enjoyed it.

I'm glad you like hearing about the pairings! I do all the cooking but my husband always loves to do the pairing and often calls mid-afternoon just to see what's on the menu so he can start thinking about the pairing. Sometimes we reverse the process -- he calls and says there's a wine he wants to try, and I start looking for the dish that will work with it.

Your husband sounds romantic and thoughtful! You have a great team. Having the right wine can elevate both the food and the wine, and its a great idea for a direction to progress with food. I'm glad you include that information, keep it up!

There is a restaurant near us that specializes in cheese and wine and they run cooking and cheese-making classes as well. They have a class coming up on pairings with beer that we are going to sign up for in the fall...although I've never been much of a beer drinker. A friend took it last spring and said it was great and she got lots of useful information ... so you may start seeing beer pairings later this year.

A light crunchy tuna salad -- perfect for a hot summer day. I was looking for a no-cook dinner, and this seemed like just the ticket. Canned tuna, lots of finely chopped cabbage, chives, mayo, yogurt, salt and pepper. It seemed a bit bland at first, so I also added some green onions and vinegar.
I served this with slices of tomato on a fresh ciabatta bed. This was a highly appreciated dinner, and one with high nutrients and relatively few calories.

This sounds just perfect for dinner tonight. Definitely the season for easy, healthy and tasty. The summer trifecta.

We enjoyed leftovers tonight, too! This heat is just terrible - somehow it seems worse each year - makes me just not want to cook!
