Simple to make -- the hardest part was rolling the omelet. Also fast, so this could be a weekday breakfast. The recipe is adaptable. I used prosciutto, but even vegetables could be substituted for the ham. Not a large portion, but satisfying enough for an everyday breakfast.
Update: Made this again, and my husband asked for it to be placed into rotation. My only complaint is that it's a hard recipe to scale up -- I guess you have to make 2 or more omelets -- and it's not enough for even a light...
