Hominy Salad

We love hominy and we love potato salad so I knew I'd have to try this. Since son doesn't enjoy sweet bell pepper I omitted it. Everyone enjoyed it but want me to leave out the cumin next time as they thought it a bit overwhelming even though it was only 1/2 teaspoon. It was supposed to be a teaspoon of cumin seeds but I realized I was out after I started the recipe so I subbed a 1/2 teaspoon ground instead. I also used parsley instead of cilantro because of the boys preference. All in all still a nice salad for a change.
