I only made half a recipe of these but they were so good next time it'll probably be a whole batch. I took them to my Mom and Dad's for sharing with the few dark chocolate lovers in my family and they all adored them. The large flacked salt on the finished product is divine. Joy is a genius!

After reading the review here at cookbooker, I knew I'd have to make this recipe ASAP, even though I'm not really a truffle lover. I'm so glad I did.

LOVED the goat cheese and pepper centers, and the salt. Less fond of the chocolate coating, mainly for textural reasons. But I still like the idea of pairing sweetened goat cheese with chocolate and I will probably try the filling as the center of a cake-like chocolate thumbprint cookie.

AJ, I'm glad you were somewhat happy with your results but was wondering if you dipped your goat cheese in the chocolate like soupereasy did? If so that's a different recipe from what's in the book. Here's a link from Serious Eats of the recipe that's in the book: <a href="http://www.seriouseats.com/recipes/2012/04/joy-the-baker-chocolate-black-pepper-goat-cheese-truffles-recipe.html">http://www.seriouseats.com/recipes/2012/04/joy-the-baker-chocolate-black-pepper-goat-cheese-truffles-recipe.html</a>

I actually went to a book store and wrote down the ingredients but not the exact process for the truffles -- so soupereasy's troubles -- since we did them together -- were probably more my abysmal memory than the fault of the recipe -- I just loved the idea of goat cheese, sugar and pepper, but should have paid more attention to the making-of-the-truffle process. Carried away by enthusiasm coupled with inattention to detail -- not a good mix! Thank you very much for the link as I'll definitely make the filling again. Since I'm not much of a truffle lover (just couldn't resist the filling in this recipe), I am going to try that cookie idea.

Your cookie idea sounds great. I love chocolate truffles but don't indulge often but did enjoy these. I found them easier to make than some I've tried.

As I was given the recipe verbally, there may have been miscommunication.
I found the goat cheese mixture far too soft to handle. Even after chilling there was no way to dip the balls in the chocolate. We ended up drizzling the chocolate over the balls then sifted the cocoa powder and added the flakes of salt.
We then put the confections in the freezer to firm up a little.
The chocolate added nothing to the party and the salt was a bit distracting.
The goat cheese was OK but the pepper would hav...

Soupereasy, sounds like your recipe was different than the one in the book since the melted chocolate was cooled a bit in the book and then mixed with the goat cheese and pepper before cooling in the fridge and then rolled into balls. Here's a link to the recipe from the book found online at Serious Eats. <a href="http://www.seriouseats.com/recipes/2012/04/joy-the-baker-chocolate-black-pepper-goat-cheese-truffles-recipe.html">http://www.seriouseats.com/recipes/2012/04/joy-the-baker-chocolate-black-pepper-goat-cheese-truffles-recipe.html</a>
