Not my type of food. A lot of roasted tomato recipes add a splash of balsamic vinegar, so I'm not really sure where this recipe went wrong, but I had the idea that it went too much in the sweet-and-sour-direction. Perhaps it was also the addition of the shallots and the spring onions that conjured associations with pickles, and not with roasted tomatoes!
Served with Chicken Breasts Stuffed with Prosciutto, Provolone and Sage - not recommended.
