This was the juiciest grated carrot salad I have ever had. It was so worth it to grate the 1 pound of carrots by hand on the small-sized holes of the box grater. The size and texture of the carrot shred gave me the impression that I was eating coconut! I did not end up with the 4 cups that I should have had, but the amount of low-fat buttermilk dressing was just perfect.
