Toasted Coconut Dutch Baby with Pineapple and Banana

I would have liked to have given this a better rating, the flavour is certainly deserving of it, but the recipe just didn’t work. The pancake didn’t puff and ended up with a rather unappealing, doughy texture.

There could be several reasons for the fail..... my oven temperature may be off, I may have used the wrong pan (I don’t have a cast iron pan) or it could be that the recipe needs work. Another problem was the amount of butter in the recipe; some of it ended up on the top of the pancake and I had to pour it off! Perhaps this wouldn’t have happened if it had puffed.

Despite my criticisms, my family and I really enjoyed the tropical flavours of the pancake.
