This made an amazing soup. I used my own homemade chicken stock and some rosemary instead of the thyme. Fantastic soup with simple ingredients and a definite repeat. I blended the whole pot for a smoother soup. Recipe available online at The Guardian.

This is a creamy, comforting soup that tastes mildly of celery with smoky bacon background notes and an additional flavour boost from grainy mustard.
I changed the cooking method slightly as I didn’t want to purée the bacon so cooked that first, removed it and most of the drippings from the pot before adding the onions and then used it as a garnish. Otherwise, I didn’t stray (too much) from the recipe.
