These are delicious and truly reminiscent of an oatmeal cookie. They did turn out quite thin but next time I will adjust accordingly.

Hubby, son, and I all enjoyed these. They have all the ingredients of most oatmeal cookies plus maple syrup. Since I was out of maple syrup I used regular pancake syrup. I'll be making these again.

NOTE: My page number is in the iPad version of this book. I've been making Rachael Ray's Oatmeal Cookie pancakes for years. These are better. It's the buttermilk and maple syrup, in the batter, I am sure of it. They turned out slightly crispy on the edges, fluffy in the middle with a nice texture from the oatmeal. I served these with real maple syrup, as I haven't bought fake pancake syrup in years. My men gobbled them up and my husband gave these five stars. Keeper!
