Very nice! Next time I would skip the step cooking the apples in advance - they probably cook enough during the 45 minutes in the oven.
I had too little bread (I used slices of leftover sourdough, very delicious), so I made only one layer of apple instead of two, using bread on the bottom and on top; additionally, I stuffed the holes in the top layer with a few ladyfingers I had leftover from the Hot Coffee Creams we had in the weekend. I was so excited to read your review -- it was the answer to my scraps of bread, apples, etc. Unfortunately, I had measured most of the ingredients before noticing my bread was beginning to mold. So -- I prepared breadless bread pudding by upping the apple and adding a bit of rolled oats. I rather liked it, but its far from bread pudding!

Haha, we would have had enough bread - had I not noticed in time that half of it had already started to mold. I guess that will always be a problem with leftover bread. but using rolled oats is a creative solution! I also made a crumble last weekend using crunchy muesli - wasn't brilliant, but better than nothing.

It was quite delicious this morning as breakfast - apples, a bit of rolled oats, a bit of custard, and currents and spice. I used to cook without recipes, but cookbooker has led to back to using recipes and seeking new ingredients. But it was nice to remember when cooking was just putting together a selection of ingredients I had on hand.
