Delicious Mexican-style vegetarian lasagna.
Like most lasagnas, there are several components to be prepared before final assembly and baking: essential quick-cooked tomato-chipotle sauce; steamed chard, zucchini and defrosted corn; fried corn tortillas; shredded Chihuahua cheese.

I'm so grateful for these challenges....they've introduced me to foods that are vibrant in both flavour and appearance. The salad on the plate is a variation of one I made for the Martha Shulman challenge.
