I had to make Pyrex Dish Chicken as I don't have a clay pot, but the result was delicious. The only changes I might make next time are to add a slightly sharp element at the end - lemon juice or maybe some capers - and also a small amount of liquid (either water or white wine if I have any to hand) when I uncover the chicken for the final twenty minutes, as the aubergine ended up a bit more caramelised than I wanted.

No clay pot, but a cast iron Dutch oven worked pretty well. I made a halfish recipe with four thighs. My eggplant was smallish and largely disappeared. Very tasty and definitely worth another try.
