This was a very good grilled cheese. I used the option of cheddar since that's what I had on hand. I also added the optional lean deli ham. I used a whole grain bread. I didn't bother to cut off the crusts. The dijon and mayo mixture was a nice touch as was using olive oil instead of butter to grill the sandwich. These were great dunked in the tomato soup from page 84.
