Mashed potatoes and mushroom gravy “ the ultimate comfort food. In this recipe, the roughly mashed potatoes are baked atop the leeks and mushrooms in a creamy sauce.
The dish is somewhat demanding, requiring over an hour of prep time involving sautéing the leeks and mushrooms, simmering them in a sauce, and boiling and mashing the potato, and then almost an hour of baking.
