This is one of the recipes from the "Dinner fairly fast†chapter and it was indeed that. In 15 minutes, I had beautifully caramelized, glazed and juicy pork chops.
The trick to the caramelization of the pork was a sprinkling of sugar along with salt and pepper just before sautéing. There wasn’t enough sugar to make it taste sweet, but it seemed to help produce a nice colour and a good sear.
