I followed advice #1 from this Hugh Fearnley-Whittingstall interview, and substituted green beans and mushrooms for the zucchini. With only 1/2 lb lamb (can you tell I'm cleaning out my freezer?), this was a flavorful dish but still mostly plant, and really easy.
