What an excellent dish! I made it exactly as written (but for the peas which I omitted). There's a fair amount of chopping, but it's really quite a simple dish to put together. I kept chopping while the first round of vegetables was sauteing; I made the dough during simmer of the vegetables. I chilled the pastry dough while the vegetables cooled.
