This was a very flavorful room-temperature/warm salad! We added a can of garbanzo beans to turn it into a main dish. Note that it calls for a lot of chives - 1C! I've not seen that amount of chives called for in a recipe before, but it did taste great. Full flavor, with the mint playing off the chives in a lovely savory-sweet sort of way. Also, to maximize the corn flavor, after cutting the kernels off the cob, I also scraped each cob, which released another ~2T of sweet milky juice.
