This comes together easily, though my sugar did take a few minutes longer to crystalize. I made a very small batch with ginger left over from making chai. Simple formula - equal parts ginger and sugar, plus some water. I prefer my ginger sliced a bit thicker than suggested, giving each piece a higher ginger to sugar ratio.
