I use this potato salad recipe because it's very tasty and also because it's very different from how most people I know make it. The potatoes are initially marinated in cider vinegar, oil, chives and sugar...than the mayo, mustard, parsley and eggs are added. The cider is what gives this recipe a different 'tang' in addition to the fresh parley and celery. Sometimes I add sliced green olives for garnish and I also like to use dijon mustard.
