Easy and delicious. Excellent for a "do-ahead" dinner salad. Grilled ciabatta, a pint of cherry tomatoes, some scallions, and fresh basil. Toss with a super easy red wine vinaigrette and let it sit for about 2 hours. Then add mozzarella and serve.
After finishing this tonight, my husband requested that it be added to the roster of the few dishes I remake on a regular basis, adding "And don't mess with it ... it's perfect just as it is."
