A nice variation on a lemony zucchini pasta dish. The addition of mushrooms was nice.

  • I used only 7oz of pasta for two, but made probably 2/3 of the sauce. This was a good amount.
  • It might be interesting to cut the zuke into thick matchsticks or some shape more interesting than slices.
  • Don't skip the cheese.
