This was really good. The lime salt was a nice touch- as were the chives. I love the tip that the extra salt can be stored in the freezer.

Loved the lime salt -- also liked the tip about melting the butter with a bit of the hot water from boiling the corn before rolling the corn in the butter. Easy to make but gives a touch of something special to the corn on the cob experience. Can't wait to try the salt with other things, like grilled fish.

My favorite way to cook summer corn is to grill it and eat it plain without seasoning, maybe a little salt. Good summer corn doesn’t need it. I was intrigued to see if
Chef Keller’s corn on the cob recipe could change my mind, like many of his others. This corn was very very good, but I think some of the other ingredients overpower the corn. This is a great way to treat really fresh corn. I ate 3 of these little corn on the cobs at one setting. Farmers market fresh corn makes this delicious, but the emulsified butter and lime salt just adds something special. I think the lime salt will be good on many other things, such as edamame.

Do please cut the ends off your corncobs as suggested, particularly if you get the corn from the farmers market, as that's where the worms are likely to be.
