This was a great basic recipe with lots of room for variations. I added fresh herbs, half sliced white and cipollini onions and mushrooms towards the end of the cook time. The meat was fall apart tender (but not disintegrated) and the veggies produced a wonderful gravy without adding thickener. Cooked in the oven at 300 about 4 hours for a 2.5 pound roast.
