My favorite frittata recipe is in the How to Eat Supper cookbook -- but this one makes a strong second place showing. Very flexible recipe that allowed me to make excellent use of some items (mushrooms, half an onion, some bacon, and some smoked mozzarella) hanging around the fridge. Recipe gives lots of options and allows for lots of variations depending on individual taste.
