A good example of the double-cooking method of mashing potatoes. It's never let me down, and it's easy enough to mess with the recipe if you want to.

This makes a really nice, garlicky (but not too strong) mashed potato. It's a bit richer than my regular recipe and requires a couple more steps (although not too much more work). I would reserve this recipe for company. My idea of a medium-sized potato must be very different from Corriher's because I only used a little less than half the liquid to mash, and it was still almost too creamy.
