Simple and delicious. I may have over mixed during the first 2 minute mix, because it took a while for the olive oil to incorporate. It just kind of sat on top of the surface of the dough until adding a bit of the water and broke up the dough with my hands. The loaf rose nicely, had great flavor and a very soft tender crumb. This recipe uses potato flakes (or potato flour) rather than mashed potato. Next time I may add the oil sooner or with the other wet ingredients.
