Easy and straightforward hearty rustic soup. The recipe makes a ton of soup -- can feed 6-8 people or a couple of people over a couple of days. Has the added virtue of being pretty healthy.

Recipe also available in issue #50.

Served with an arugula, fennel, mint, prosciutto and pomegranate salad from Smitten Kitchen.
