Great one pot meal - comes together easily and great flavors. I used chicken thighs and they cooked in about an hour or so. Followed the advice of another reviewer and threw the potatoes, tomatoes and herbs/spices before adding the chicken since it needed to be on top anyway. I did give the chicken a final sprinkle of red pepper flakes and a dose of olive oil just before baking. Crisped the skin under the broiler for a few minutes.
