Wester and aj12754, thanks for your feedback on substitutions. For now I will concentrate on those recipes whose ingredients are not too exotic/seasonal. Substitutions are certainly a slippery slope.

Future Challenges
The contrast between high flavor-low labor and zuni (high labor!) is striking, so its a good contrast. I'm enjoying the challenge of zuni, it was a good choice.

Favourite Thanksgiving Recipes?
I LOVE Paul Prudhomme's sweet potato-pecan pie recipe (available in the NYT archive). Its the perfect compromise. Pumpkin-like bottom, pecan pie-like top, and with the Chantilly cream, its to die for.
