My family loves hoppin john, and we could eat it every week. I'm trying different recipes to find the one we like the best.

This is a very good recipe. It uses a ham hock (which were finally in my local store), onions, celery, green pepper, and at the end, a sprinkle of green onions. We compared this to our standard (Joy of Cooking, see other review). But instead of my usual modifications, I followed this recipe, with the exception of using the pressure cooker to get the beans cooked.

Kids didn't like this as well as my usual. I think it might be the addition of carrots that I usually do. Not traditional, but it adds some sweetness.

I really liked the green onions on the top!
